When choosing a wine there are no hard & fast rules. Gone are the days where it is taboo to serve red wines w white fish. A salad is no longer just a selection of tossed leaves & the fusion of eastern & western cuisines completely dispel the traditional approach to food & wine matching.
Budgets are less of a problem nowadays when choosing wine than they have ever been. The reason is simply that winemaking has improved so much at all levels that even the least expensive wines should be tasty & fresh. The question instead is one of balancing the expense of the wine w that of the food, & the formality of the occasion. If you're spending a lot on elaborate food & wonderful flowers, for example, it would be appropriate to have wine to match. For a less grand occasion, serve less grand wine. To blow all your budget on food & have nothing left for wine (or vice versa) would be equivalent to wearing a Armani suit w gum boots: each is perfect in its way, but they're not right together.
